The brain’s main fuel, glucose, lasts up to six hours if you have not eaten. The glucose stored in the liver as glycogen simply runs out. When blood glucose is too low, the liver converts glycogen into glucose and releases it into the blood. But if the glycogen has been depleted, the body has to turn to less efficient fueling methods.
Eating at regular intervals throughout the day is vital to a balanced diet. It keeps your metabolism active and prevents you from overeating. Those who skip lunch (or eat unhealthy lunch) often feel more tired and find it more difficult to concentrate.
A recent research shows that one in four people in the United States is too busy to take a break for lunch and one in three eats lunch at their desk. Many of us actually work during lunch in order to save time and avoid working late. This actually happens to have more negative than positive effects.
Nourishing the brain with food, oxygen and water during lunch will actually result in more efficient work and better productivity and creativity in the afternoon.

Taking the time to have lunch with a friend or a co-worker in the middle of a busy day will make you feel refreshed and energized. Don’t rush! If you eat lunch on the run you create a conflict in your body between digesting food and moving the muscles. Just take that half an hour out to eat lunch in a calm and restful environment. What should you eat to get the energy you need?
Go for simple ingredients full of nutrients. Choose meals containing fresh vegetables, wholegrains, lean protein and healthy fat.
Your salad should be as colorful as possible. Try different combinations. You can include spinach, tomatoes, carrots, cucumbers, pepper, apples, etc. Good sources of lean protein are fish, eggs, beans, and chicken breast. Mix with sweet potatoes, brown rice, avocado or some nuts and seeds to get the most of your lunch.
All of these will keep you full for longer and you will eventually start to skip your afternoon unhealthy snacks.
